牛舌在一頭牛裡屬於稀少部位,能切下的牛舌大約只有1至1.5公斤。一條牛舌可分為舌根、舌中、舌尖和舌下四個部位。牛舌的處理不簡單。需要有相當經驗的刀手,透過完全手工精修,去除掉不適合入口的部分,才能留下最佳的風味與口感。

牛舌中後端| 質地相對柔軟,也更容易咀嚼,油脂非常豐富,味道溫和,切面大一些,帶有粉紅色。 牛舌較少運動,擁有濕潤的油脂,取出之份量非常有限
牛舌最經典的吃法是日式燒肉,厚切牛舌要慢慢烤,不著急翻面,一面滲出汁水後再翻面,通常會在肉上切一些花刀,使切口變嫩

口感與部位:取自牛舌舌根到中段脂肪含量高且顏色呈現粉白色的部分,經過燒烤後口感外酥內嫩、油脂與紅肉細緻交雜。
