簡介:
「油甘魚」在日本又名「出世魚」,寓意出人頭地,飛躍進歩。
油甘魚的脂肪中富含DHA和EPA,據說有激活腦部和預防生活習慣病的功能。
油甘魚不僅富含DHA,煙酸含量亦相當豐富(每100g中約含9.5mg)。
煙酸屬於水溶性維他命B群,有助代謝醣類、脂類和蛋白質。
此外,煙酸有助於活躍腦神經,促進血液循環。
特別要推薦給經常飲酒的人,因為據悉它可以激活分解酒精的酶以及分解酒精分解後產生的乙醛的酶。
這樣說來,飲酒時吃油甘魚似乎不錯。
推薦食法:
1. 日本油甘魚鮫解凍, 沖淨,抹乾 ( 不用去鱗)(通常皮不會吃)。
2. 用幼鹽塗抹魚肉部份醃15分鐘
(鹽的份量請按魚大少及個人口味,自行調較 )。
3. 在魚肉上掃一層薄油, 放在已掃油的錫紙上 (或牛油紙)。
4. 放入預熱180-200度的焗爐/氣炸鍋焗约15分鐘或至熟透。
